“La Cocina de la Concordia”, gastronomical workshops in some cities of the Network

The Network of Spanish Jewish Quarters programmed from March 12th to 15th some gastronomical workshops titled “La Cocina de la Concordia” (The Concord Cooking) with the participation of the cooks Víctor Gloger and Samuel Perea, ambassadors of two of the greatest gastronomical traditions of the Mediterranean. Víctor and Samuel met in Jaén, Lucena, Sevilla and Córdoba to cook together. The main goal was to highlight the importance of the Mediterranean gastronomy in the coexistence and development of pacific relationship between the people living in this area.

Paradores joins the celebration of Purim

In collaboration with the Network of Spanish Jewish Quarters, Paradores has organized six special opportunities to enjoy exclusive dramatized dinners between 22nd February and 15th March.

As a result of the recent agreement between Paradores and the Network of Spanish Jewish Quarters, Paradores has organized a very special dramatized dinners related to the Jewish festivity of Purim in some Paradores located in Jewish cities, such as Segovia (February 22nd), Toledo (February 23rd), Ávila (March 1st), Plasencia (March 2nd) and Jaén (March 15th). Attendants will be able to taste Sephardic cooking, as well as they’ll enjoy a theatrical show based on the Book of Esther, which explains how this queen saved the Jewish people.

Paradores created an exclusive menu with some of the most typical dishes of the Sephardic cuisine with a touch of avant-garde. We can stand out some of them, like Aubergines with Palm Honey and Oregano, Cod’s Falafel with Hummus, or the Lamb’s Leg filled with Nuts.

Actors Isabel Prinz and Héctor Cercoz will be performing in the dramatized dinners as “Esther and Haman”, explaining the origins of Purim, a Jewish festivity celebrated every year on the 14th of Adar (in the Jewish calendar), coinciding with the carnivals in our tradition.

The work conmemorates the miracle explained in the Book of Esther, in which the Jewish people was saved from being anihilated under the orders of the Persian king Ahasuerus, thus becoming one of the most joyful days of the calendar. Jewish people must fast and pray the day before, and then they celebrate a big feast on the next day.

The Paradores chosen for this event are accomodations located in cities of the Network of Spanish Jewish Quarters or in environments with important Jewish heritage. The capacity of this dinners is limited, therefore people interested in attending should book before by contacting directly with the chosen Parador, enjoying this way this special grastronomical and cultural event. A very special Touristic offer: the Network’s latest news presented in Fitur 2013

The President of the Network of Spanish Jewish Quarters and Mayor of Ávila, Mr. Miguel Ángel García Nieto, along with other mayors and representatives from the rest of the cities belonging to the Network, presented this afternoon the last projects of the association in Fitur.

The first project he mentioned has been Caminos de Sefarad, a platform developed by Google which allows worldwide users to travel and virtually discover the 24 cities of the Network of Spanish Jewish Quarters, to walk through their streets, to discover the main highlights by getting to know the history behind them all from a unique and special website.

Moreover, the Network has included the last Google Maps technlology in order to allow the visitors to experience the discovery of all this places related with the Jewish heritage in this cities, as well as to access all information regarding the monuments or places, its history and main characteristics and pictures. Visitors can see all this highlights through Google Street View.

Another of the great projects presented today has been the Sefarad Card, the loyalty card of the Network that will provide better and nicer trips and visits to Sepharad destinations. A personal card which visitors can obtain through the website of the Network and that offers interesting discounts to the cultural and touristical services belonging to the project RASGO, as well as special promotions, raffles and others.

Finally, a debate on the Cultural Routes of the Council of Europe in Spain has been held in order to dynamize and improve the Spanish touristic and cultural product in the world market. Several people has participated in the debate, such as Penélope Dénu, Director of the European Institute for the Cultural Routes and Executive secretary of the Council of Europe for the Parcial Agreement on the Cultural Routes; Antonio Barone, Director of the Phoenician Route and representative for the Cultural Routes in the Parcial Agreement, and Pilar Barraca, from the General Section of Historical Heritage Protection of the Ministry of Culture, all of them beside the President of the Network.

The Network of Spanish Jewish Quarters is a founding member of AEPJ (European Association for the Preservation and Promotion of Jewish Culture and Heritage) and the Cultural Route “European Route of Jewish Heritage”, stated in 2005 as “Great Cultural Route” by the Council of Europe, and its one of our most consolidated international projects.

Furthermore, since it was participating in Fitur, the Network has taken the opportunity to officially sign the contract of adhesion of the first RASGO Tour Operators. They include several travel agencies and tour operators specialised in tours to the Spanish Jewish heritage. This first tour operators are the following: Viajes El Corte Inglés, Hife Tours, Nextel, Veronia Tours and Vips in Spain. Offers and vacation packages offered by them are already available at the Network’s website. Several other companies are still in process to be part of this group. Therefore the Network is working in order to transform its promotional effort into real sales.

Through all this projects, the Network of Spanish Jewish Sites keeps on developing the programmes part of its strategical plan, which objective is to make Spain a real touristical destination on the Jewish heritage for tourists, both national and international.

Caminos de Sefarad

A joint project of the Network of Spanish Jewish Quarters and Google

The project “Caminos de Sefarad” (Routes of Sepharad”) , was presented yesterday, December 19th, at Centro Sefarad-Israel in Madrid. The project aims at promoting on an international level the Jewish heritage of the member cities of the Red de Juderías de España (Network of Spanish Jewish Quarters) by means of the Internet, using all the possibilities offered by the new technologies. The presentation has been made by the Chairman of the Network of Spanish Jewish Quarters and Mayor of Tudela, Mr. Luis Casado, the Director of Public Policies and Institutional Affairs of Google Spain, Italy, Portugal and Greece, Ms. Bárbara Navarro, and the General Director of Centro Sefarad-Israel, Mr. Florentino Portero. The Director of the office of the High Comission of the Government for the brand “España,” of the Ministry of Foreign Affairs, Mr. José Ángel López Jorrín, has closed the ceremony.

Users all around the world can now visit and make virtual tours through the 24 cities of the Network of Spanish Jewish Quarters, stroll through their streets, discover outstanding heritage sites and cultural elements, and get to know the history behind all these, from one and the same platform: www.redjuderias.org. The Network of Spanish Jewish Quarters has incorporated the Google Maps technology, geo-positioning the different places of interest and providing them with their respective historical documentation, which is displayed once the user clicks on one of the signalled places on the map. Besides, users can visualise any of these points on street level thanks to Street View.

Furthermore there is an option enabling users to find all this information by means of a comprehensive search panel, which divides the different sites according to their category and type, their geographic region or chronological period.

The technology supplied by Google enables the organisation of all these contents through maps and chronograms with different levels of information. There is a total of 523 sites, 910 chronological entries, 1.667 images, 67 informative texts and 138 comments in lexical voices, which users can access through a unique website which stores information spanning from the 3rd century till today.

The project, which is available in Spanish and English, has been realised with the collaboration of Google and the city councils of Ávila, Barcelona, Besalú, Cáceres, Calahorra, Castelló d’Empúries, Córdoba, Estella-Lizarra, Girona, Hervás, Jaén, León, Lucena, Monforte de Lemos, Oviedo, Palma, Plasencia, Ribadavia, Segovia, Seville, Tarazona, Toledo, Tortosa and Tudela.

The project thus offers everyone interested in the subject, experts, professionals of the academic sector, etc., a space to find and to discover the past and the present of our history. Furthermore it contributes to the consolidation of the brand España on an international level, in the framework of tourist activities aimed at the promotion of the heritage of our cities, thus following one of the main objectives of the Network of Spanish Jewish Quarters.

Sephardic cooking recipes for some Jewish festivities

On the last edition of the European Days of Jewish Culture, our collaborators in Valencia, La Javurá, made some interesting recipes we want to share with you. We hope you enjoy them!

Tarta de queso al estilo israelí

Una tarta de queso muy económico. Aunque se hace todo el año, es imprescindible en SHAVUOT (Cashrut: halav, leche).
La cáscara
1 taza de migas de galletas (no importa cuales aunque a mi me encanta los de soja y trigo integral)
4 soperas de margarina (o mantequilla) derritida
Mézcla las migas y margarina.
Forra la fuente de la panificadora o una fuente redondo de entre 22-24cm. Colóca las migas en el fondo de la fuente forrado

El relleno
Un tarro de 500g de queso Quark marca Milbona, 20% materia grasa, sabor natural (en los supermercados Lidl)
1 taza (240ml) de yogur natural, griego “Eridanous” (en los supermercados Lidl)
½ taza (100g) azúcar
2 huevos
2 soperas de maizena
Mételo todo en un robot de cocina. Viértelo todo sobre el fondo de galletas machacadas que ahora está en la fuente de la panificadora. Hornea una hora. No saques la tarta de la fuente hasta que esté bien enfriada (unas dos horas). Si usas un horno normal (y no la panificadora), pon el horno a 175-180ºC y usa una fuente redonda de 22-24cm. Hornea una hora; quizás más, quizás menos…. depende. Cocina con tu corazón y todo saldrá bien.

Sfratti: Palos italianos

ROSH ha-SHANÁ: Equinoccio de otoño, el momento de contabilidad
(Cashrut: Parvé)

La masa
3 tazas (420g) de harina
1 ¼ tazas (260g) de azúcar
¼ cucharadita de sal
2/3 taza (160ml) de vino
1/3 (80ml) taza de aceite de oliva 0’4%
Divide la masa en 6 partes iguales. Guarda la masa en el frigo durante unas horas. Extiende cada trozo para hacer una rectángulo de ~30x~10cm.

El relleno: Guirlache
1 taza de miel
½ cucharadita de canela
¼ cucharadita de clavo
¼ cucharadita de pimienta negra
1/8 cucharadita de nuez moscada
La mitad de una naranja confitada picada
420-450g de nueces picadas
En una sartén grande, hierve la miel durante exactamente 3 minutos. Agrega las especias, naranja picada y las nueces. No deja de remover. Cocina exactamente durante 5 minutos más. ¡Respeta los minutos! Quita la sartén. Vierte la masa en una superficie untada de aciete y espolvorizado con un poquito de harina. Con paletas, divide la masa en 6 partes. Usa las paletas para dar las masas forma de palo (30cm) hasta que puedas tocarlos con las manos. Si untas los dedos con aceite, puedes dar forma con la ayuda de una cuchara.

Envuelve cada palo de guirlache en su correspondiente tira de masa. Colócalos sobre una fuente forrado con papel de horno. Hornea durante 10 minutos. Pinta con huevo diluido y da la vuelta de la fuente. Deja que cocine 10-15 minutos más.

Tarta de calabazín y chocolate

SHABAT: TISHA(9) b’AV (el solsticio de verano, día nacional de luto, para romper el ayuno) y TU(15) b’AV (día de los enamorados) y L’ag b’Omer (el 33º día de los 49 que contamos entre Pésaj y Shavuot)
(Cashrut: parvé)

1 taza (200g) de azúcar
3/8 taza de harina de cacao
1 cucharadita de bicarbonato
½ cucharadita de Royal
¼ cucharadita de sal
½ cucharadita de canela
2 huevos
¾ taza (180ml) de aceite de oliva
1 ½ tazas (360ml) de calabacín rayada
¾ taza (80-100g) de nueces picadas (guarda un puño de nueces para esparcir por encima de la superficie de la tarta)
1 taza (240g) de harina de trigo 12-13%
Mézclalo todo por el orden dado. Rellena una fuente de panificadora (12x22x13cm) y hornea durante una hora, o una de ~23x~32 durante ~40min. Esparce nueces picadas por la superficie.

Tarta de Pésaj de calabacín y algorroba (en lugar de chocolate)

PÉSAJ: Equinoccio de primavera (Cashrut: parvé kosher l’pésej)
Convertiremos la tarta de calabacín en una tarta de calabación para Pésaj. Para hacer una tarta de Pésaj puedes coger una receta cualquiera del resto del año (como la de calabacín) y sustituir la mitad de la cantidad de harina de matsá por la cantidad de harina de jamets requerida y añadir un huevo más.
½ taza de harina de matsá
1 taza (200g) de azúcar
3/8 taza de harina de algorroba
1 cucharadita de bicarbonato
½ cucharadita de Royal (para Pésaj)
¼ cucharadita de sal
½ cucharadita de canela
3 huevos
¾ taza (180ml) de aceite de oliva
1 ½ tazas (360ml) de calabacín rayada
¾ taza (80-100g) de nueces picadas (guarda un puño de nueces para esparcir por encima de la superficie de la tarta)
Mézclalo todo por el orden dado. Rellena una fuente de panificadora (12x22x13cm) y hornea durante una hora, o una de ~23x~32 durante ~40min. Esparce nueces picadas por la superficie.

The growing importance of kosher wine production in Spain

There has been a lot of talk and comments on kosher wine lately, but generally there still persists quite some confusion, and many people, including professionals from the very same wine sector, ignore the term and its meaning.

What does “kosher wine” mean?

Kosher is a Hebrew term and means “pure”; it is thus a wine which is apt to be consumed by followers of the Jewish religion, which establishes a series of regulations in the kashrut of the Torah. Its adequacy is determined by a certificate awarded by certain agencies, of which there are some three hundred all over the world.

The only difference between a kosher wine and other wines really lies in the fact that all stages of the process of production in the winery are carried out by practicing Jews, and that all products employed during this process are kosher, too.

There are two categories: if the wine has been pasteurised, it qualifies as mevushal, and may be handled by non-Jews, even though it will descend to a category of a lesser product of wine. If only Jews have intervened in its production, the wine qualifies as passover, and is therefore apt to be opened at Pesach, the most important Jewish religious festivity. It is these wines that are most interesting.

Besides Jewish consumers, kosher wines are also attracting an increasing number of aficionados all over the world, who consider them to warrant a sort of guarantee as to natural and rigorous elaboration of the wine.

Being kosher is like being biodynamic, or ecological, it opens the doors to export markets, and this is one of the reasons why, especially during the last decade, there have been appearing brands with this certification from all the main wine-producing regions in Spain

A stroll through the Vineyards of Sepharad

The mid-nineties saw the launch of kosher wines in Spain, with the cooperative Capçanes, in Tarragona, starting to produce its Peraj Ha’abib, considered one of the best kosher wines in the world.

During the last decade, more wineries and projects in Spain have joined it, amongst whose there is to point out ELVI WINES, managed by Anne Aletà and Moises Cohen, a Sephardic family which has become the most important producer of kosher wines in Spain, with wineries in different parts of the country: Ribera de Jucar, Rioja, Priorat, Alella, Monsant, Penedes and Utiel-Requena, with a wide range of quality wines, which have received prestigious prizes and honourable mentions all around the world.

Other wine-growing regions and wineries, such as Ramón Bilbao, Gonzalez Byass, Faustino, Tagonius, Fernández Arcaya, Ruiz Viñaspre, Vallformosa, Paternina and Garzal have joined in and have contributed to the establishment of this type of wine as a reference on an international level, so that countries such as the United States or, to a lesser degree, Israel, are buying nearly all the kosher wine produced in Spain.

The Network of Spanish Jewish Quarters (Red de Juderías de España), within its endeavour to recover the Jewish culture and heritage of its cities, has launched different projects in order to promote gastronomy with Sephardic roots and kosher wine elaborated in Spain.

One of these projects is “Vineyards of Sepharad”, a tour of the vineyards and wineries producing kosher wine in Spain, as well as of those establishments committed to the recovery and promotion of the Jewish legacy of our cities, offering a range of activities related to kosher wine and Sephardic gastronomic culture.

The Sephardic Sweet receives the kosher certificate

The Sephardic Sweet of Walnuts, Oranges and Spices, winner of the 2005 1st Sephardic Confectionery Contest of the Network of Spanish Jewish Quarters, has been recently awarded with the kosher certificate by the Rabbis of Madrid. This certificate proves that the manufacturing process and the ingredients used to elaborate the sweet have been examined by the rabbis to assure that they follow the Jewish law.

 

 

The recipe for this delicious dessert is inspired by a recipe from the 14th century. The spices have an important role in it, and only ingredients which could be found in the Spanish kingdoms at the time are used, although they have been adapted to the 21st century taste.

The Sweet was initially created by Luis Salas from Jaén, but since his retirement the production was transferred to Productos Campos early in 2012. The product can be bought at the website dulcesefardi.com or through exclusive shops around the country.

The Network in the United States: some conclusions

On June 11th, 13th and 14nd 2012 the Network of Spanish Jewish Quarters has organized several presentations of the RASGO product in the USA cities of Los Angeles, Miami and New York.

The Network itself and Spain in general through its product, they both have an extraordinary niche in the American market, mainly based in the roots tourism by Jewish communities, a lot of them coming from a Sephardic origin. Therefore the activities hosted by the Network had a very important attendance and success.

Taglit-Birthright as a modern Jewish pilgrimage

“Uno de los acontecimientos más interesantes que surgieron en los últimos años, y que influyó ampliamente en la vida de los peregrinos judíos diásporos, ha sido el proyecto “Taglit-Birthright” en el año 2000. Dicho programa educativo turístico permite a todo judío del mundo entre 18 a 26 años que no ha visitado Israel, que lo realice gratuitamente durante diez intensos días. “Taglit-Birthright”, fue promovido por el gobierno israelí, filántropos privados, la Agencia Judía para Israel y las comunidades Judías del mundo.

Los objetivos del proyecto son: combatir la asimilación de los judíos en la diáspora y fortalecer los lazos entre los jóvenes judíos del mundo e Israel. Hasta la fecha han participado casi 300.000 jóvenes de 54 países del mundo, siendo el 70% de los Estados Unidos. La inscripción para participar de este programa se realiza por medio de Internet, el candidato/a tiene la libre elección de elegir en que parte del año participar: Invierno o Verano Israelí. Cabe destacar que según los datos publicados, es más grande la demanda que los lugares disponibles, por lo tanto se decidió establecer un proceso previo al viaje para decidir a los futuros postulantes.”
