Shavu'ot recipe. Cucumber and Cheese Carpaccio

Light and refreshing, vegetable salads teamed with lactics are an excellent option for this Shavu'ot time. The original recipe of this salad includes cheese and yoghurt, but on this occasion I propose to you a more simplified version: only with cheese.

Ingredients

  • 2 medium-sized cucumbers
  • 3 tbsp Extra Virgin olive oil
  • 2 tbsp apple vinegar
  • 250 grammes fresh cheese (Burgos or Villalón)
  • Salt according to taste
  • Sprig of fresh tarragon

Preparation


Slice the cucumber and the cheese. Chop the leaves of the fresh tarragon (saving some leaves for decoration). Salt cucumber slices and let them rest for ten minutes. Then proceed to marinate them in a mixture of the oil, vinegar and tarragon. Drain and arrange the cucumber slices in a flower shape on a plate. Put the cheese slices on top and decorate with remaining tarragon leaves.
